We prepare the anchovies A la Antigua using a traditional process different from that of anchovies in olive oil. We clean the salt carefully and fillet them one by one with a razor knife. They are ideal as an appetizer because of their authentic flavor and originality in the dish.
We select each anchovy individually, choosing those that contain an optimum percentage of fat.
