The fine clam is the one that fetches the highest price in the market. Besides being able to be prepared in many different ways, it is also consumed raw, that is, with a few drops of lemon juice, in the same way as we do with oysters. It is distinguished by:
Its shell: It has fine radial lines, and also other concentric lines, so that between them they form a grid.
Color: white to brown, depending on the area where it was harvested.
The siphons: Which are the tubular structures through which the water flows, and which employ them to move, feed, breathe and reproduce, and which peek out at the moment when the clam opens its shell a little, they are separated from each other.
Description
Suggested consumption: Clams in marinara style, clam soup, stuffed clams, Fabada with clams.
We recommend placing them in a deep container with cold water and a little salt, so that they release the soil they may contain, as these shellfish feed by filtering the soil.
