The French mussel or Bouchot is a bivalve mollusk that feeds in the water where it breeds. Bouchot mussels are different from the rest due to their peculiar production system, to which they owe their name.
They are slightly smaller than Galician mussels, with an intense orange color, due to their phytoplanktonic nutrition, and a mild flavor: somewhat sweet and with hints of wood. As for its nutritional composition, the French mussel stands out for being a low-fat food: 1.9% per 100 gr. (of which 0.59 gr. are saturated and 126 mg. cholesterol).
