This bivalve mollusk is related to clams and oysters. It belongs to the family Pectinidae, order Ostreoida. It is characterized by its tasty and refined meat, in addition to its reddish corals.

They are prepared in many ways: baked, blanched in a pan, or as a main ingredient in quiches or creams. The most classic recipe is the gratin, add a mixture of breadcrumbs, garlic, parsley and grated cheese.

Do not overcook them, otherwise they will harden and dry out. It is also not recommended to eat them raw for hygienic reasons because, like all bivalves, they are filter-feeding animals. Once washed and deprived of their shells, you can preserve them by freezing or even in brine, and they will last for a long time.
